New Food Truck School with Matt Trotter of Horseradish Kitchen + Market

Young entrepreneur and business owner Matt Trotter will take participants step-by-step through the process of creating and managing a successful food truck business at the new Food Truck School at Town Square. Classes will be held every Monday night from 6:00 p.m. to 7:30 p.m. starting October 16 through November 6 in Green Lake Kitchens at Town Square, the commercial kitchen business incubator in downtown Green Lake. Enrollment cost is $99 and is limited to 10 food trucks with up to two participants per food truck.

“Because food trucks are less expensive to run, they are a perfect way to start out in the restaurant business,” said Green Lake Renewal’s Fran Hill. “However, like any business, it’s not as easy as it looks. Food Truck School will give you the inside scoop on how to succeed right from the start.”

Food Truck School will offer a four-session course that provides everything one needs to launch a successful food truck business by the 2018 season. Participants can expect to draft their own menu, create an exciting vibe, find the necessary licensing for their business, learn how to find and build-out a truck, and market their business successfully. Matt Trotter, the owner of The Horseradish Food Truck, and now the bricks-and-mortar Horseradish Kitchen + Market in Princeton, WI, started his food truck venture three years ago using Green Lake Kitchens at Town Square as his truck’s “kitchen”. He purchased an old school bus on Craigslist and towed it to a lot near his retail store, Teak and Soxy. The bus had no motor and no kitchen, but he figured out how to make the business work. Now, with a new restaurant opening in November 2017, the Horseradish Food Truck will be on the go.
